Special Protocol Weekly Meeting

Are you following an AIP, Whole30, Keto, or other restrictive program to address health concerns or goals? It's extremely beneficial to have a support network of other folks with your same needs, so let's get together for lunch and help each other out! Whole Foods Market offers $2 off the hot food and salad bars every Wednesday, so let's take advantage! The Town and Country center also has a charming little farmer's market going on from 10-2 as well so we can support some local vendors as well. 🙂 The Whole Foods dining section is rather tiny so if we need a large table, we may have to meet in the outdoor seating area.

From rainforest treasure to luscious treat—immerse yourself in the world of chocolate! This summer, MOHAI invites you to journey through history to get the story behind the treat in this exciting exhibition, developed by The Field Museum in Chicago. Begin in the rainforest with the unique cacao tree, visit the ancient Maya civilization of Central America, and discover what chocolate meant nearly 1,500 years ago. Travel northward to the Aztec civilization of 16th-century Mexico, where cacao seeds were so valuable they were used as money. Discover chocolate’s introduction into the upper class of European society, and its transformation into the mass-produced world commodity that we know today. Chocolate will engage your senses and reveal facets of this sumptuous sweet that you’ve never thought about before. After learning about chocolate’s impact across the globe, visitors will be able to get a taste of the past and present of local chocolate culture, through artifacts and photographs pulled from the MOHAI archives to share the stories of beloved Seattle chocolate-makers and confectioners. Learn about what’s behind the wrapper of your favorite chocolate bar!

PLEASE NOTE: Admission to Chocolate: The Exhibition will be $8 on all Free First Thursdays, July – September. Tickets to the exhibit can purchased at the front desk upon entry to the museum, and will be checked at the exhibit entrance. crosspost: Water Bath Canning Class

RSVP for real here: http://www.meetup.com/Seattle-Urban-Homesteaders/events/195639522/

East County Senior Center
276 Sky River Pkwy, Monroe, WA

Water Bath Canning: this is the processing method that is required to make jam, plain salsa, home bottled fruit, basic non-brined pickles and some simple relish (corn relish). In other words, water bath canning is for HIGH ACID FOODS.
Instructors: Georgia Schlegal and Susan Alling Things to Bring With You:
1 wide-mouth quart canning jar with a metal ring (lid will be provided)
1 pint canning jar (either regular or wide mouthed) with a metal ring (lid will be provided)
2 dish towels (to wrap and carry home your 2 hot jars)
Socks to wear on feet while canning in the kitchen
1 apron to wear during canning
Your favorite paring or cutting knife (optional) Bring No Children Under Age 14 With You to This Class
Techniques Taught: This class will show how to scald and peel peaches, prepare canning jars, put peaches in the jars, cover with light syrup, safely prepare the lids, rings for sealing, then water bath the quart jars for long term storage.
We will also learn how to prepare a mild salsa with canned diced tomatoes and a seasoning mix, reinforcing the above techniques, and showing how these skills can transfer to other fruits and relishes. The ratio of acid to your ingredients will be stressed when making this salsa to make a safe product.
You will also learn how to use a simple conversion chart to estimate planting rows in your garden, pounds of fruit per canning jar and how to estimate the volume of fruit or tomato products your family uses throughout a year. Water bath canning is currently one of two preserving methods approved by the USDA for high acid foods. Plain tomatoes may be water bathed provided the proper amount of lemon juice is added to the bottom of the jar to ensure the required acidity.
All canning peaches used in this class are donated by Mott's Fruit in East Wenatchee. Reliable Guidebook: The best most reliable guidebook for bottling both high and low acid foods is the BALL Blue Book (of preserving, home canning, freezing and
dehydration) available at Ace Hardware, Wal-Mart and Winco stores. Home bottling is not necessarily cheaper. It IS, however, more reliable and dependable than relying upon the grocery stores and allows you to control how much sugar or salt you add to your family's foods. You also eliminate many food miles by buying from local reputable farmers. How to Register:
You must reserve your spot by sending an email to <susanalling @hotmail.com> with the following information:
YOUR NAME
YOUR EMAIL ADDRESS
YOUR PHONE NUMBER ON Tues, Aug 5

COST: $28 per person (cost of ingredients, lids, handouts and kitchen use, and tax to the Dept of Revenue) Payment info: Mail your check for $28.00 to Strategies for Provident Living, PO Box 1163, Duvall, WA 98019 prior to the class so we can purchase the supplies. You will receive confirmation within 48 hours.
EXTRA CLASSES: will consider doing a second water bath canning class this summer, in later Aug.

crosspost: Home Butchering Class with Pastured Meat Birds

RSVP for real here:
http://www.meetup.com/Seattle-Urban-Homesteaders/events/196442102/

Hey backyard chicken farmers – those birds are only good for laying for about 3 years. When then? • I've had several requests over the years to teach people how to butcher chickens humanely at home with minimal equipment, and currently have an opportunity to offer a hands-on experience. I have five more pastured meat birds than I anticipated, so there are five openings for this class. These birds will be BIG. They should dress out between 7 and 9 pounds, not including the neck and giblets. Your basic grocery rotisserie chicken runs two to four pounds. I will demonstrate butchering three birds, and you will process your own bird, with help as needed, and take it home at the end of the class.

The class will be held on our suburban homestead, in a convenient Lynnwood location. It will start at 3:00 p.m. on Sunday, July 27, and run three to four hours. Those who arrive on time will get a brief tour of our suburban homestead. The charge for the class is $50, and includes the price of one meat bird. An extra $20 will be charged if two people choose share one bird. Payments can be made through PayPal. PLEASE SIGN UP BY 8:00 P.M. ON THURSDAY as I will be butchering any unreserved birds on Friday. You can contact me through the contact form on my website, www.glimmercroft.com, or by phone at[masked] (email not provided to protect from spam). See you there!

Sunday Dinner

Did you snag the Groupon for Herb n' Flavors? Let's redeem it together! Join us for a family-friendly dinner outing at a locally owned and sourced business that cares about how we eat!

Self-Care Working Group

This will be a paid event ($20) to implement a consulting service in a group setting. Outstanding contributions from attendees will be appreciated with a free pass to a subsequent meeting. Practitioners, too. Topics will include lifestyle, nutrition, supplements, diet, sleep, quantified-self technology, self-empowerment and any topic from any of my past Dialog Dinners hosted by Joni Sare, or blogs from <a>www.Project Wellbeing.com.</a>

Three dates per month: the second Monday, the third Sundayand/or the fourth Thursday.  Pick one that is most convenient, or attend all three.  The Sunday is for longer time and easier transportation.  I hope this is flexible enough that at least one date will work for you. If none of these work, please let me know.

This is intended to be a working group, where progress over time is part of the process.

To ensure a safe environment, all participants will be asked to sign a confidentiality agreement that binds them against discussing any other person's health issues and meeting comments.

There is no requirement for implementation.  You can sit and listen for informational purposes only, if that is what you wish.

If you do not know me and would like a general introduction, watch “Nutrients for Better Mental Performance” on the Google TechTalk Channel on YouTube.  Or just type “Steve Fowkes” at the YouTube prompt and select something else.
