Rice is a great side for many meals – but why have the grain rice, when you can have a far more nutritious Paleo alternative – cauliflower rice? This recipe is quick and easy and can be varied by using different herbs and spices. You can also stir in an egg whilst cooking, to make an egg fried rice; or make it a dish in it's own right by adding more vegetables such as capsicum (bell peppers) and zucchini.

Cauliflower Rice

Cauliflower rice is a fantastic Paleo alternative to grain rice, offering more nutrition and versatility. This recipe is quick, easy, and can be customized with different herbs and spices. It’s so tasty that many people won’t even realize it’s not “normal” rice!

Ingredients

  • Half a cauliflower
  • Half an onion
  • Coconut oil
  • Pinch of cumin
  • Pinch of paprika
  • Pinch of cayenne pepper
  • Sea salt to taste

Instructions

  • Prepare the Cauliflower: First, grate the cauliflower florets by hand or use a food processor until the consistency resembles rice. This will form the base of your dish.
  • Cook the Onion: Dice the onion into small pieces. Heat some coconut oil in a frying pan over medium heat. Add the onion and cook until it starts to turn golden, ensuring it doesn't burn.
  • Add the Cauliflower and Spices: Next, add the grated cauliflower to the pan. Sprinkle in the cumin, paprika, and cayenne pepper. Stir the mixture for a few moments, ensuring the cauliflower rice doesn't burn. Add more coconut oil if necessary to keep it from sticking.
  • Serve and Enjoy: Finally, season with sea salt to taste. Serve the rice immediately. You can also make extra to store in the fridge, ready to be reheated with dinner.

    Coincidence? We had cauliflower rice with dinner tonight. Cooked the cauliflower, mashed it with butter, salt and pepper to taste. I used this as a base to go under my chilli tomato sauce. I make this sauce regularly and add to it either tuna, diced cooked chicken or other protein of choice.
    It's easy to get in a rut and just make the same thing because it's easy, and I had not thought to use the cauliflower as fried rice but those spices would lift it to another level. I'm definitely going to make this in the next day or so.

    Have to say that I haven't tried the spices in the mix but often have Cauliflower Rice with plenty of things, especially curries. Although to me it resembles Couscous in look and texture (or am I blending it for too long?). Also great if you add Broccoli!

    I pretty much do the same thing with cabbage. I rice it in blender with water, drain through fine mesh strainer. Cook the onion with garlic, add mixed veggies of peas, carrots, green beans a little corn, red peper and saute it all up!
