Avocado, Chicken & Cashew Curry Recipe paleo diet dinner lunch-min

Recipe: Avocado, Chicken & Cashew Curry

My housemate bought me the best birthday present – an enameled cast iron casserole dish, which I've been itching to try!  I had the idea last night to make a curry with one of my favourite ingredients – avocado.  I hoped the avocado would work as a creamy base for the chicken curry, which seemed to work well.  I love cashew nuts too, so added in a few, which was a good contrast to the texture of the avocados.  I think next time I’ll add some more curry powder – I'm always wary of adding in too much!

Oh yes - you CAN cook with avocado...
Ingredients
  • 2 Organic Chicken Breasts, diced
  • 2 Ripe Avocados, mashed
  • 1 Zucchini, diced
  • 2 Mushrooms, diced
  • 1.5 tins of Coconut Milk (I use Ayam)
  • 1 tablespoon Coconut Oil (I'm using Melrose at the moment)
  • 1 pot Tomato Paste
  • 2 Onions (I used one white, one brown), diced
  • 1 Handful of raw Cashew Nuts, roughly chopped
  • 2 Cloves Garlic, crushed
  • 1.5 Teaspoons Grated Ginger
  • 1 Tablespoon Curry Powder
  • Salt (I’m using Pink Himalayan Sea Salt)
  • Half Teaspoon of each Cumin, Cinnamon, Cayenne Pepper, Paprika
Instructions
  1. I browned the chicken in the coconut oil in the casserole dish; then put it to one side.
  2. I sautéed the onions until soft on a medium heat, and then added in the garlic, zucchini, mushrooms, coconut milk and tomato paste.
  3. I mashed up the avocados and stirred them in. I then added the chicken, spices, seasoning and cashew nuts and left it to simmer on a medium heat for 20 minutes.

I though it turned out really well, but could have been a bit spicier.  I don’t think dinners like this need anything to go with them, but I’m sure it would go well with some cauliflower rice.

This should serve at least four, which means lots of leftovers!

Recipe Cinnamon Sweet Potato Beef Hash-min

Cinnamon Sweet Potato Beef Hash

I didn't have much spare time last night and an almost empty fridge, so I had to get a bit creative in the kitchen to make my Paleo dinner.

I had half a packet of organic beef mince, a few veggies and lots of herbs; this is what I put together in under 30 minutes.  This would work with whichever vegetables you have, I was just limited by a very overdue shopping trip.

Cinnamon Sweet Potato Beef Hash
Recipe type: Dinner
Ingredients
  • 200g Organic Beef Mince
  • Tablespoon coconut oil (I'm using Melrose organic unrefined coconut oil at the moment)
  • Quarter of a sweet potato, grated
  • Half a zucchini, grated
  • 3 mushrooms, grated
  • Half a red onion, diced
  • 1 carrot, diced
  • 1 capsicum, diced
  • 1 small tin organic tomato paste (the brand I use has no added ingredients, other than tomatoes)
  • I used 1 teaspoon of each garlic powder, onion powder, cinnamon (I love cinnamon and have been using it in everything lately!) & salt (I'm using pink Himalayan salt at the moment), oregano and thyme
Instructions
  1. I diced the onion and sautéed it in the coconut oil.
  2. I then grated the sweet potato and added it to the onions.
  3. After a few minutes on the heat, I added the mince.
  4. Once the meat was thoroughly browned, I added the remaining vegetables, the tomato paste, the herbs and seasoning.
  5. I continued to cook for about ten minutes, whilst stirring frequently.
  6. With everything minced, grated or diced, it all cooked very quickly; perfect for a busy evening like last night!
  7. I just wish I'd made extra for lunch leftovers...

Ginger & Orange Pork Ribs paleo diet recipe-min

Recipe: Ginger & Orange Pork Ribs

I got some lovely pork ribs from my local organic butcher yesterday.  All of the recipes I found seemed to involve sugar, soy sauce, wine, honey and commercial sauces.  I obviously wanted a paleo recipe, so decided to create my own.  I love the combination of orange and ginger, so made a mix which I coated the pork in.

Yum - you can't beat ribs. Usually hair-raisingly sickly sweet, my paleo version is far healthier - but no less delicious.
Ingredients
  • Pork Ribs
  • Zest of one and half oranges
  • Half a cup of extra virgin olive oil
  • One clove of garlic, crushed
  • One teaspoon of basil, thyme, parsley & rosemary
  • One and a half teaspoons of ground ginger
  • Salt (I'm using Himalayan pink salt at the moment)

Instructions
  1. I crushed the garlic clove, and grated the orange peel.  I then mixed the herbs, garlic and orange in the oil.  I coated the ribs in the mixture, then laid them out on a baking tray.  I then cooked the ribs at 180C (350F), for about 45 minutes.

I really enjoyed this dinner, the orange & ginger flavours went so well with the pork.
