Ingredients
- 6 eggs beaten
- 1 onion finely chopped
- 1 clove of garlic crushed
- 1 green chilli deseeded and finely chopped
- ½ tsp turmeric
- ½ tsp cumin
- ½ tsp black pepper
- 4 cherry tomatoes finely chopped
- A handful of spinach leaves finely chopped
- Small bunch of fresh coriander chopped
- Olive oil
- Sea salt to taste
Instructions
- Prep Ingredients: Finely chop the onion, garlic, green chilli, cherry tomatoes, and spinach. Chop the fresh coriander and set aside.
- Cook Onions: Heat a frying pan with a little olive oil to a medium heat. Saute the chopped onion with a little sea salt until golden brown.
- Add Aromatics: Add the crushed garlic, chopped green chilli, turmeric, cumin, and black pepper to the pan. Fry for another couple of minutes, stirring well to combine.
- Add Vegetables: Add the finely chopped cherry tomatoes and spinach to the pan. Stir well and cook for 1 – 2 minutes until the spinach wilts slightly.
- Cook Eggs: Pour in the beaten eggs, turning down the heat slightly. Stir continuously until the eggs are scrambled and cooked to your liking.
- Serve: Garnish with fresh coriander, serve immediately, and enjoy.
Notes
- This dish pairs well with some Paleo-friendly bread or a side of avocado for a more substantial breakfast.
- Adjust the amount of chilli to your spice preference.
- You can add more vegetables like bell peppers or mushrooms for additional flavour and nutrients.

Loved the Indian Scrambled Eggs, love Indian food! It made enough for me to take for breakfast for the next 2 days I work. I used Serrano pepper, coriander powder instead of the fresh leaves, and used a bunch of cilantro.
