Maximilien Cooking Class: Foie Gras
If you love French cuisine, chances are you've heard of something called ‘foie gras'. In this class, Chef Christian Potvin will demonstrate to you how to properly prepare (and enjoy!) this renowned French delicacy, easily adding a gourmet touch to your French-inspired menus. Upon completion, you'll surely be able to impress your dinner guests with your own rendition of cured foie gras, foie gras au torchon, and seared fresh foie gras!
In addition, you will prepare a surprisingly delectable foie-inspired dessert, and enjoy it with a glass of wine. Carlos Romero of Maximilien will demonstrate the perfect wines to accompany the new dishes in your repertoire.

This class will take place on Saturday, February 22nd, from 1PM to 3PM, and includes generous foie gras portions and wine tasting.

Maximilien Cooking Class: Canard (Duck)
Canard! Canard! Canard! Easily one of the most popular proteins in French cuisine, duck is often revered for its flexibility and exquisite taste. In this course, Chef Christian Potvin will teach you some very simple techniques to clean, carve, and cook a whole ‘canard'. You'll learn how to confit, roast, and even render and save the duck fat! Upon completion, you'll be able to prepare your own succulent duck breasts (‘magret'), duck legs, and a whole host of other mouthwatering dishes, surely impressing any discerning duck lovers in your life!

Get a taste of duck, with tips and ideas from Chef Potvin in this exciting and fun class! Carlos Romero from Maximilien will also demonstrate the perfect wines to accompany your new dishes.

This class will take place on Saturday, March 1st, from 1PM to 3PM, and includes generous duck portions and wine tasting.

Maximilien Cooking Class: French Sauces
Be bold, daring, and a bit “Saucy!” with Chef Christian Potvin, as you learn how to prepare the “Five Mother Sauces”, from which all other French sauces are created! In this class, you'll learn how to traditionally prepare each of the following fundamental sauces to French cooking: Béchamel, Veloute, Espagnole, Hollandaise, and Tomato. Additionally, Chef Potvin will demonstrate other essential French techniques, such as making mayonnaise, vinaigrettes and basic stocks, as well as how to quick-pan sauces and freeze stocks for future use.

This class is on Sunday, March 9th, from 1PM to 3PM, and includes generous tasting.
