Duck Processing Class at Munkebo Farm

**class fee includes taking home a 6-8lb duck – perfect for thankgiving coming up**

Note this is not for everyone! And that’s okay. Many of us found Paleo on a quest to have a more healthy relationship with our food and where it comes from. We enjoy going to the farmers market and shaking hands with those that supply our food. We even go to farm tours and see first hand how our food choices come from happy, healthy, and sustainable farms. However, for some of us this quest may give us the desire to understand how our food is processed before it is packaged up and shipped off to our market.

This is an opportunity to see how ducks are processed and made ready for the consumer. We will be going out to Munkebo Farm in Manor for this class. Germaine, owner and operator of Munkebo, will guide us through the process of slaughter, plunking machine, and cleaning. Students will each go home with a processed duck weighing about 6lbs.

Bring: 
Ice Chest to bring home your duck
Clothes you don't mind potentially getting stained
Apron and gloves (optional)

Germaine will be showing us how to break down the complete duck. If you wish, you can take home the liver, gizzards, feet for broth, etc.
