The clue is in the name – these chicken thighs are suitably spicy and oh so satisfyingly crispy, thanks to a mix of ground almonds and desiccated coconut. Throw the soggy, batter-coated, southern fried chicken portions in the bin – these are where it's really at. I used ginger, cayenne pepper for a bit of a kick, and garam masala – but I highly recommend experimenting and finding your favorite blend of herbs and spices. I used chicken thighs, but you can use the coating on wings – or whichever piece of chicken you prefer!

These Crispy Spiced Chicken Thighs are perfect for a family dinner, offering a flavorful and healthier alternative to traditional fried chicken. The combination of spices and the crispy coating will make this dish a new favorite in your household.

The unique combination of ground almonds and desiccated coconut not only makes the chicken thighs crispy but also adds a delightful nutty flavor that pairs perfectly with the spices. The cayenne pepper gives the dish a pleasant heat, while the garam masala adds a depth of flavor that is both aromatic and savory.

Why Chicken Thighs?

Chicken thighs are a fantastic choice for this recipe because they remain juicy and tender when baked. The higher fat content compared to chicken breasts ensures that the meat stays moist and flavorful. Plus, they are more forgiving if slightly overcooked, making them perfect for a busy weeknight dinner.

Tips for Perfect Crispy Chicken:

  • Use thick coconut milk: The thickness of the coconut milk helps the coating stick to the chicken and contributes to the crispiness.
  • Let the chicken rest: After coating the chicken, let it sit for a few minutes to allow the flavors to meld and the coating to adhere better.
  • Experiment with spices: Don’t hesitate to try different spices and herbs to find your perfect blend. Smoked paprika, turmeric, or even a touch of cinnamon can add interesting flavors to the dish.

These are not only delicious but also versatile. You can serve them with a fresh green salad, roasted vegetables, or even a side of cauliflower rice for a complete Paleo meal.
