- 8 Chicken thighs Free range
- 200 ml coconut milk Thick
- 50 g Almonds Ground
- 50 g Coconut Desiccated
- 2 Garlic Cloves Crushed
- 1 tsp Ginger Fresh, finely chopped
- 1 tsp Cayenne pepper
- 2 tsp Garam masala
- Pinch Salt
Preheat the oven to 180°C (350°F / Gas Mark 4).
In a large bowl, combine the coconut milk with all the spices. Stir in the ground almonds and desiccated coconut.
One by one, add the chicken thighs to the mixture, ensuring an even coating covers each piece of meat. Arrange on a roasting dish, then transfer to the oven.
Bake for approximately 45 minutes, until crisp and golden brown. Serve with a fresh green salad.
