    I have 2 fav ways of roasting sweet potatoes.
    1. In coconut oil and when it's done I sprinkle a little bit of shredded coconut.

    2. Roasting it in duck fat or lard and when it's nearly done break few eggs over it and put it back into oven for 3 minutes. I like eggs with runny yolk. And then sprinkle chopped dill over it.
