I had a couple of trays free in my dehydrator, and some zucchini's that had to be used… so I came up with some zucchini shoe-string fries that are a great snack, or would make a perfect side dish for dinner. I know a lot of people miss crunchy textures when they go paleo – if that's you, you'll love these!

If you don't have a dehydrator, get one! No seriously, you can also make these in an oven on a very low heat.

Equipment

  • Dehydrator or Oven
  • Mandoline Slicer or Knife
  • Mixing bowl

Ingredients

  • 2 zucchinis
  • splash of olive oil
  • sea salt

Instructions

  • Prepare the Zucchini: Slice the zucchinis into thin strips using a mandoline slicer or a knife. The thinner the strips, the crunchier the fries will be.
  • Season: Toss the strips in a drop of olive oil and season with sea salt. Ensure all the strips are evenly coated.
  • Arrange on Trays: Lay the zucchini strips on a dehydrator sheet in a single layer, making sure they do not overlap.
  • Dehydrate: Set your dehydrator to about 145 degrees Fahrenheit (63 degrees Celsius) and dehydrate for 16 hours. Check regularly to ensure they are drying evenly.
  • Alternative Oven Method: If using an oven, set it to the lowest temperature and leave the oven door slightly open to allow moisture to escape. Check frequently until the zucchini strips are crispy.

Variations:

This method works great with other vegetables too. Try carrots, parsnips, or even capsicum for a colourful and tasty snack. Note that adding oil will reduce the shelf life compared to dehydrating without it.

    I am glad to see this recipe as I love crisps and a lot of other things I think off as party food as well.
    Before starting Paleo I used to make my own potatoe crisps,in the oven (with very thinly sliced potatoes).
    I do not have a dehydrator, so I think I will try this recipe in the oven.
