- 2 large Portabella mushrooms
- 2 large tomatoes as close in size to the mushrooms as possible
- 500 g salmon I used two pieces from the fishmongers
- Coconut oil
- Salt I used Celtic sea salt
- Fresh lime
- Paprika
Preheat the Oven: Preheat your oven to 200C (400F) while you wash the tomatoes and mushrooms.
Prepare the Mushrooms: Carefully cut the stalks off the mushrooms and set them aside for another use (like adding to a batch of Paleo Chili; waste not, want not).
Slice the Vegetables: Cut the mushrooms into two slices each. Then, cut the tomatoes into four slices each, after removing the tops and bottoms.
Cut the Salmon: Use a large glass or a biscuit cutter to cut 8 rings out of the salmon pieces. The glass should be similar in diameter to the mushrooms.
Arrange on Baking Tray: Arrange the mushrooms, tomatoes, and salmon rings onto a baking tray. Brush with coconut oil and sprinkle with a little salt.
Bake: Cook in the preheated oven for about ten minutes.
Assemble the Burgers: Once cooked, assemble the burgers by starting with a bottom slice of mushroom, alternating layers of tomato and salmon, and ending with the mushroom top.
Finish and Serve: Serve with a squeeze of lime, a pinch of paprika, and some spinach leaves if desired.
