Ingredients

  • 1/2 Lemon juiced
  • 1 tbsp extra virgin olive oil plus extra to drizzle
  • 130 g Tinned Tuna in brine, drained
  • ½ red capsicum bell pepper, seeded & finely diced
  • 1 stick celery finely sliced
  • 4 iceberg lettuce leaves
  • 2 tbsp paleo mayonnaise
  • 1 tsp Capers finely chopped
  • Sea salt & freshly ground black pepper

Instructions

  • First, combine the lemon juice and olive oil in a bowl. Add the tuna, capsicum, celery, and some seasoning, and combine well.
  • Next, arrange the lettuce leaves on a plate and place the tuna mixture on top.
  • In a small cup, mix the mayonnaise and capers together. Drizzle this tartar dressing over the tuna mixture.
  • Finally, finish with an extra drizzle of olive oil and season with salt and pepper to taste.
