- 1/2 Lemon juiced
- 1 tbsp extra virgin olive oil plus extra to drizzle
- 130 g Tinned Tuna in brine, drained
- ½ red capsicum bell pepper, seeded & finely diced
- 1 stick celery finely sliced
- 4 iceberg lettuce leaves
- 2 tbsp paleo mayonnaise
- 1 tsp Capers finely chopped
- Sea salt & freshly ground black pepper
First, combine the lemon juice and olive oil in a bowl. Add the tuna, capsicum, celery, and some seasoning, and combine well.
Next, arrange the lettuce leaves on a plate and place the tuna mixture on top.
In a small cup, mix the mayonnaise and capers together. Drizzle this tartar dressing over the tuna mixture.
Finally, finish with an extra drizzle of olive oil and season with salt and pepper to taste.
