Equipment

  • Pan
  • Cheesecloth or clean tea towel
  • Food processor or grater

Ingredients

  • Large spoonful of coconut oil
  • Chicken breast free range, obviously
  • 2 carrots
  • Half a head of cabbage
  • Dash coconut aminos
  • Sea salt

Instructions

  • Prepare Ingredients: First, melt the coconut oil in a pan over medium heat. Cut up the chicken into strips or dice it, as you prefer, and add it to the pan.
  • Grate Vegetables: Grate the vegetables using a food processor or an old-school grater. Once grated, place them in a clean tea towel or cheesecloth and wring out the excess liquid. This step is crucial for achieving the perfect stir fry texture.
  • Cook Chicken: Cook the chicken until it starts to look golden and is thoroughly cooked through.
  • Add Vegetables: Add the grated vegetables to the pan with the chicken. Stir well to combine.
  • Season: Add a dash of coconut aminos for flavouring and season with sea salt to your taste. Feel free to add herbs and spices if you want to change up the flavour profile.
  • Serve: Serve hot and enjoy your quick and simple chicken stir fry. It's a perfect dish for a busy weeknight dinner.
