Ingredients

  • Pork Ribs
  • Zest of one and half oranges
  • Half a cup of extra virgin olive oil
  • One clove of garlic crushed
  • One teaspoon of basil thyme, parsley & rosemary
  • One and a half teaspoons of ground ginger
  • Salt I'm using Himalayan pink salt at the moment

Instructions

  • Prepare the Marinade: Start by crushing the garlic clove and grating the orange peel. Mix the herbs, garlic, and orange zest into the olive oil. Ensure the mixture is well combined.
  • Marinate the Ribs: Coat the pork ribs thoroughly in the marinade. Lay them out on a baking tray, making sure they are evenly spread out.
  • Cooking the Ribs: Preheat your oven to 180°C (350°F). Place the baking tray in the oven and cook the ribs for about 45 minutes, or until they are thoroughly cooked and the edges start to crisp.
  • Prepare the Sautéed Vegetables: While the ribs are cooking, dice some bacon, sweet potatoes, pumpkin, and onion. Sauté these in coconut oil until they are tender and caramelized.
