Ingredients
- 2 cauliflowers broken into florets
- 2 large sweet potatoes peeled and chopped into cubes
- 1 red onion sliced
- 1 tbsp cumin
- 1 tbsp coriander
- 1 tsp turmeric
- 1 tsp chilli powder
- 1 x 5cm piece of ginger peeled and chopped
- 2 cloves of garlic peeled and chopped
- 1 x 400ml can chopped tomatoes
- 50 ml coconut cream
- Olive oil
- Salt and pepper to taste
Instructions
- Prepare Vegetables: Break the cauliflowers into florets and peel and chop the sweet potatoes into cubes. Slice the red onion, and chop the ginger and garlic.
- Cook Onions: Heat a large pan with some olive oil to a medium heat. Add the sliced onions and cook until golden.
- Add Spices: Add the chopped garlic, ginger, cumin, coriander, turmeric, and chilli powder to the pan. Cook for 2 – 3 minutes, stirring to combine.
- Cook Vegetables: Add a little more oil if needed, then add the cauliflower florets and sweet potato cubes. Cook for 3 – 4 minutes to allow the vegetables to colour and pick up the flavours.
- Simmer: Pour in the chopped tomatoes and stir well. Cover with a lid and leave to simmer for 20 minutes, stirring occasionally.
- Finish: Thicken the curry with coconut cream just before serving. Season with salt and pepper to taste.
Notes
- This curry can be served with a side of rice or cauliflower rice for a complete meal.
- For added protein, consider adding some chickpeas or lentils to the curry.
- Adjust the amount of chilli powder to your spice preference.
