- 2 whole squid skinned and cleaned
- 1 fresh red chilli chopped and deseeded
- 1 red pepper chopped and deseeded
- 2 bay leaves
- 2 cloves smoked garlic
- Juice of 1 lime
- 2 tbsp olive oil
- Small handful of fresh coriander
Prepare the Marinade: In a food processor, blitz together all the ingredients except the squid. This will create a flavourful marinade packed with the smoky taste of garlic and the zestiness of lime.
Marinate the Squid: Place the cleaned squid in a resealable plastic bag. Pour the marinade over the squid, ensuring it is well-coated. Seal the bag and leave it in the refrigerator for as long as you want, preferably overnight. The longer it marinates, the deeper the flavour will be.
Grill the Squid: When you're ready to cook, heat a griddle to a high heat. Remove the squid from the marinade, shaking off any excess. BBQ the squid for 3–4 minutes on each side, brushing occasionally with the leftover marinade. This will enhance the smoky chilli flavour.
Serve and Enjoy: Once cooked, remove the squid from the griddle and serve immediately. Garnish with a bit of fresh coriander for an added touch of freshness.
