  • 1 garlic clove crushed
  • 2 large vine tomatoes deseeded and chopped
  • 1 tablespoon fresh parsley finely chopped

  • Prepare the Beans: Begin by boiling some water in a medium saucepan. Once boiling, add the French beans and simmer for two minutes. Drain the beans and rinse them under cold water to stop the cooking process. This helps maintain their bright color and crunch.
  • Sauté the Aromatics: Next, heat a little olive oil in a non-stick frying pan over medium heat. Add the finely chopped shallots and crushed garlic, and sauté for about two minutes until they are slightly softened and golden. This creates a flavorful base for the dish.
  • Add the Beans: Add the French beans to the pan, ensuring they are well coated with the shallot and garlic mixture. Sauté for another minute or so to heat the beans through.
  • Incorporate the Tomatoes: About 30 seconds before you are due to serve, add the chopped tomatoes to the pan. The goal is to heat them through without damaging their texture. Finally, season the dish with sea salt, black pepper, and freshly chopped parsley.
