- Barbecued Paleo Sausages
- 2 Red Onions
- 2 Brown Onions
- 1 Clove Garlic
- 1 kg Tomatoes
- Tomato Purée
- 2 Handfuls of Raw Almonds
- 1 Sprig Fresh Rosemary
- 1 Glass Red Wine
- Chicken Stock
- Coconut Oil
- Salt & Pepper
Dice the Onions: Begin by dicing the red and brown onions. Heat some coconut oil in a pan over medium heat and brown the onions until they are soft and translucent.
Add Garlic and Tomatoes: Crush the garlic and add it to the pan. Chop the tomatoes and add them along with the tomato purée and chicken stock. Allow the mixture to simmer for a few minutes while you prepare the almonds.
Chop the Almonds: Roughly chop the almonds and add them to the pan along with the glass of red wine. Let the mixture continue to simmer for a few more minutes.
Combine Ingredients: Chop the leftover sausages into bite-sized pieces and add them to the pan. Season with salt and pepper, and add the sprig of fresh rosemary.
Simmer and Serve: Allow the casserole to simmer until the sausages are thoroughly heated. Serve the casserole hot and let the extra portions cool before freezing them for future meals.
