- 100 g (3.5 oz) Brussels sprouts
- Splash olive oil
- 8 rashers bacon diced
- 2 large carrots peeled & diced
- Knob of butter or use extra olive oil, if you don't do dairy
- Sea salt & black pepper to taste
- 1 tablespoon chopped coriander cilantro
- 1 tablespoon hazelnuts chopped
Prepare the Sprouts: First, peel the exterior leaves off the sprouts and remove the tough ends. Cut the sprouts in half and finely slice them.
Cook the Bacon and Carrots: Next, heat the olive oil in a pan over medium heat. Add the diced bacon and fry for a few minutes until it starts to crisp up. Then, add the diced carrots and cook for another 5 minutes, stirring frequently to prevent sticking.
Add the Brussels Sprouts: Add the butter (or extra olive oil) to the pan along with the sliced Brussels sprouts. Stir and cook for another 5 minutes, ensuring the sprouts soften but still retain some crunch.
Season and Serve: Finally, season with sea salt and black pepper to taste. Serve garnished with chopped coriander (cilantro) and hazelnuts.
