- 4 large carrots
- pinch of cumin seeds
- pinch of mustard seeds
- pinch of cinnamon
- splash of extra virgin olive oil
- juice of 1/2 a lemon
- juice of 1/2 an orange
- small bunch of fresh coriander cilantro, finely chopped
- sea salt & fresh pepper
- pinch of orange zest
Prepare the Carrots: Peel and grate the carrots into a mixing bowl.
Heat the Spices: In a pan, heat the cumin and mustard seeds to release their flavours. Once aromatic, grind them in a pestle and mortar. Add in the cinnamon.
Combine Ingredients: Mix the ground spices with the grated carrots in the pan and heat for a couple of minutes to blend the flavours.
Add Citrus and Herbs: Pour in the olive oil, lemon juice, orange juice, chopped coriander, and orange zest. Mix thoroughly to ensure all ingredients are well combined.
Marinate: Allow the salad to marinate for an hour to let the flavours meld together before serving.
