Ingredients

  • 4 large carrots
  • pinch of cumin seeds
  • pinch of mustard seeds
  • pinch of cinnamon
  • splash of extra virgin olive oil
  • juice of 1/2 a lemon
  • juice of 1/2 an orange
  • small bunch of fresh coriander cilantro, finely chopped
  • sea salt & fresh pepper
  • pinch of orange zest

Instructions

  • Prepare the Carrots: Peel and grate the carrots into a mixing bowl.
  • Heat the Spices: In a pan, heat the cumin and mustard seeds to release their flavours. Once aromatic, grind them in a pestle and mortar. Add in the cinnamon.
  • Combine Ingredients: Mix the ground spices with the grated carrots in the pan and heat for a couple of minutes to blend the flavours.
  • Add Citrus and Herbs: Pour in the olive oil, lemon juice, orange juice, chopped coriander, and orange zest. Mix thoroughly to ensure all ingredients are well combined.
  • Marinate: Allow the salad to marinate for an hour to let the flavours meld together before serving.
