  • A handful of fresh tarragon
  • A handful of pine nuts

  • Sear the Asparagus: Start by searing the asparagus on a griddle over medium-low heat. You don’t need any oil for this step, as the asparagus will crisp up nicely without it. Keep an eye on the asparagus to avoid overcooking.
  • Prepare the Herb Mixture: While the asparagus is cooking, finely chop the fresh parsley and tarragon. In a mixing bowl, combine the chopped herbs with 2 tablespoons of olive oil, a pinch of sea salt, and a dash of black pepper. Mix well to create a flavorful herb oil.
  • Finish the Asparagus: Remove the asparagus from the griddle once it is suitably chargrilled, usually after 7–8 minutes. Drizzle the herb oil over the hot asparagus, ensuring it is evenly coated.
  • Add the Pine Nuts: Finally, scatter a handful of pine nuts over the asparagus. The nuts add a delightful crunch and complement the flavors of the herbs and chargrilled asparagus perfectly.
