Ingredients

  • 1 tbsp olive oil or coconut oil for sautéing
  • 1 brown onion chopped
  • 3 cloves garlic minced
  • 2 carrots medium, sliced
  • 2 celery stalks chopped
  • 1 zucchini medium, diced
  • 200 g free-range chicken breast or thighs shredded
  • 4 cups chicken bone broth
  • 1 tsp turmeric, ground
  • 1 tsp dried thyme
  • salt and pepper to taste
  • fresh parsley garnish, chopped

Instructions

  • Heat oil in a large pot. Add onion and garlic, to coconut oil, cooking until soft.

  • Stir in carrots, celery, and zucchini. Cook for 5 minutes.

  • Add shredded chicken and spices. Pour in bone broth and bring to a boil.
    200 g free-range chicken breast or thighs, 4 cups chicken bone broth, 1 tsp turmeric, ground, 1 tsp dried thyme, salt and pepper
  • Reduce heat and simmer for 25–30 minutes until vegetables are tender.
  • Garnish with fresh parsley and serve warm.

Notes

  • You can use pre-cooked chicken to speed things up.
  • Add extra broth or water if you prefer a thinner soup.
  • Great for freezing - store in airtight containers for up to 3 months.
  • For a slow cooker version, combine all ingredients except parsley and cook on low for 6–8 hours.
