- 1 tbsp olive oil or coconut oil for sautéing
- 1 brown onion chopped
- 3 cloves garlic minced
- 2 carrots medium, sliced
- 2 celery stalks chopped
- 1 zucchini medium, diced
- 200 g free-range chicken breast or thighs shredded
- 4 cups chicken bone broth
- 1 tsp turmeric, ground
- 1 tsp dried thyme
- salt and pepper to taste
- fresh parsley garnish, chopped
Heat oil in a large pot. Add onion and garlic, to coconut oil, cooking until soft.

Stir in carrots, celery, and zucchini. Cook for 5 minutes.

Add shredded chicken and spices. Pour in bone broth and bring to a boil.
200 g free-range chicken breast or thighs, 4 cups chicken bone broth, 1 tsp turmeric, ground, 1 tsp dried thyme, salt and pepper
Reduce heat and simmer for 25–30 minutes until vegetables are tender.
Garnish with fresh parsley and serve warm.

You can use pre-cooked chicken to speed things up.
