Ingredients

  • 1/2 a green cabbage shredded
  • 2 grated carrots
  • 3 spring onions trimmed and finely sliced
  • 4 rashers of bacon* cooked until crispy, then finely sliced

For the dressing:

  • 150 ml (1/2 cup) paleo mayonnaise
  • 1 teaspoon apple cider vinegar
  • sea salt & black pepper to taste

Instructions

  • Prepare the Dressing: First, combine the Paleo mayonnaise, apple cider vinegar, sea salt, and black pepper in a bowl. Mix thoroughly until the dressing is well blended.
  • Mix the Ingredients: Next, add the shredded cabbage, grated carrots, and finely sliced spring onions to the bowl. Toss the vegetables with the dressing until they are evenly coated.
  • Add the Bacon: Finally, incorporate the crispy bacon slices into the coleslaw mixture. Gently mix everything together, ensuring the bacon is evenly distributed throughout the salad.
  • Serve: Season to taste with additional salt and pepper if needed. Serve immediately, and enjoy the unique flavors of this Coleslaw.

Notes

*Use a good quality organic bacon for best results
