Recipe: Cinnamon and molasses flax cookies

Cinnamon and molasses flax cookies – the name says it all doesn’t it? These paleo treats are warming and lightly spiced, with a melt in the mouth texture. The molasses and flax work together in this recipe to bind the cookie dough, so no eggs are needed. Best of all, they are ready in less than 15 minutes!

Makes 6 cookies

Cinnamon and molasses flax cookies Ingredients:

  • 1 cup ground almonds
  • 2 tbsp ground flaxseed
  • ½ tsp cinnamon
  • ¼ tsp baking powder
  • Pinch sea salt
  • ¼ tsp ginger (optional)
  • 1 large tbsp coconut oil
  • 1 tbsp blackstrap molasses
  • 1 tbsp coconut sugar + 1 tsp cinnamon, to coat

1)    Preheat your oven to 160C / 325F / Gas mark 3. Line a baking tray with some parchment paper and set aside.

2)    In a mixing bowl, combine the ground almonds, flaxseed, cinnamon, baking powder, salt, and ginger (if using). Then add the coconut oil and molasses, and mix well. This is best done using a stand alone mixer, but if you don’t have one, your hands will be just as good. Just be sure that all ingredients are thoroughly combined. The dough will be relatively sticky, but still workable.

3)    In a separate bowl, combine the coconut sugar and cinnamon. Using your hands, roll the cookie dough into golf ball sized shapes, then coat evenly with the cinnamon and coconut sugar mixture. Lay out on the baking tray, and flatten slightly.

4)    Bake for 8 – 10 minutes, then remove from the oven. Leave to cool for 5 minutes before serving – these are best eaten straight away but keep for up to a week.

Paleo Diet Recipe Primal Chicken Mole-min

Recipe: Chicken Mole

With no relation to the blind, burrowing creatures, this wonderful one pot is actually pronounced ‘Mol-ay.’ If you’re a fan of chilli con carne, you’ll love the rich, sweet and smoky flavours that resonate from this stew. Dark chocolate, chipotle chillies, ground nuts and cinnamon all add up to make a unique, piquant dish that will have you running straight back to the kitchen for more chicken mole!

Chicken Mole Ingredients:

  • 1 medium free range chicken
  • 2 onions
  • 1 red chilli, chopped and deseeded
  • 3 garlic cloves, crushed
  • 2 tsp ground cumin
  • 2 tsp ground cinnamon
  • 2 heaped teaspoons chipotle paste
  • 2 tbsp almond butter
  • 1 handful sultanas
  • 1 x 400g can chopped tomatoes
  • 40g organic dark chocolate

Chicken Mole How To:

Preheat an oven to 180C. Season the chicken, and roast for half the allocated cooking time (approx 45 minutes). Leave to stand for 10 minutes, then shred the meat with a fork and set aside.

Chop the onions into light strips. In a large, flameproof casserole dish, heat a little olive oil to a medium heat. Add the onion strips and cook for 5 minutes until softened. Add a little more oil, along with the chilli, garlic and spices, and cook for another 2 minutes until aromatic.

Meanwhile, crush the sultanas in a mortar and pestle. Whisk in the chipotle paste and almond butter, then add to the pan. Pour in the chopped tomatoes and 400ml hot water.

Add the shredded chicken to the dish, stir well, then cover with a lid and simmer for 30 minutes. Stir occasionally.

10 minutes before serving, break up the dark chocolate and add to the dish. It should turn a deep brown and thicken slightly. Simmer gently for the 10 minutes, then serve with fresh vegetables and cauliflower rice.

Cinnamon Sweet Potato Beef Hash

I didn't have much spare time last night and an almost empty fridge, so I had to get a bit creative in the kitchen to make my Paleo dinner.

I had half a packet of organic beef mince, a few veggies and lots of herbs; this is what I put together in under 30 minutes.  This would work with whichever vegetables you have, I was just limited by a very overdue shopping trip.

Cinnamon Sweet Potato Beef Hash

Ingredients
  • 200g Organic Beef Mince
  • Tablespoon coconut oil (I'm using Melrose organic unrefined coconut oil at the moment)
  • Quarter of a sweet potato, grated
  • Half a zucchini, grated
  • 3 mushrooms, grated
  • Half a red onion, diced
  • 1 carrot, diced
  • 1 capsicum, diced
  • 1 small tin organic tomato paste (the brand I use has no added ingredients, other than tomatoes)
  • I used 1 teaspoon of each garlic powder, onion powder, cinnamon (I love cinnamon and have been using it in everything lately!) & salt (I'm using pink Himalayan salt at the moment), oregano and thyme
Instructions
  1. I diced the onion and sautéed it in the coconut oil.
  2. I then grated the sweet potato and added it to the onions.
  3. After a few minutes on the heat, I added the mince.
  4. Once the meat was thoroughly browned, I added the remaining vegetables, the tomato paste, the herbs and seasoning.
  5. I continued to cook for about ten minutes, whilst stirring frequently.
  6. With everything minced, grated or diced, it all cooked very quickly; perfect for a busy evening like last night!
  7. I just wish I'd made extra for lunch leftovers...

Paleo Tea

It must be because I'm English – but I love drinking tea.  I love Indian Chai, so thought I'd try making my own Paleo Tea.

Ingredients
  • 2 tablespoons of black tea
  • 2 bay leaves
  • 12 cloves
  • piece of cinnamon
  • 6 black cardamon pods
  • nutmeg
  • small piece of ginger
Instructions
  1. Simply put the ingredients in your teapot and add boiling water
  2. Strain and enjoy!
