Recipe: Potato free Aloo Gobi

What’s your favourite part of Aloo Gobi? Is it the blend of warming, aromatic spices? Perhaps the crispness of the cauliflower? Whatever it is, I’d guess it’s certainly not the potatoes. Whether you’re avoiding potatoes because they’re a nightshade, or you just don’t care for the insulin spike, you won’t miss them in this adapted Aloo Gobi. Double the cauliflower just means double the goodness – enjoy! Another example of a dish where white potatoes just really aren't necessary!

Ingredients
  • 1 large cauliflower, roughly chopped
  • 1 tsp coconut oil
  • 1 red onion, finely sliced
  • 1 tsp black mustard seeds
  • 1 tsp nigella seeds
  • 1 tsp cumin seeds
  • Handful cashew nuts, chopped
  • ½ teaspoon turmeric
  • 3 red chillies, deseeded and chopped
  • ½ cup full fat coconut milk
  • Large handful of Coriander
Instructions
  1. Bring some water in a large saucepan to a boil. Submerge the cauliflower and cook for about two minutes, until slightly softened. Drain and set to one side.
  2. Heat the coconut oil in a large, heavy based pan (I use cast iron). Add the sliced onion, mustard seeds, nigella seeds and cumin seeds, and toss together for two or three minutes.
  3. Add the cauliflower to the pan, along with the cashew nuts, and cook for a further couple of minutes until they are both golden. Toss in the turmeric and chilli.
  4. Add the coconut milk to the pan. Continue to stir the contents for 5 minutes or so, until most of the liquid has been absorbed by the cauliflower. Serve immediately, garnished with fresh coriander.

Recipe: Paleo Tabbouleh

Who needs Bulgur Wheat when you have the oh so versatile cauliflower? The magic in Tabbouleh lies in the fresh herbs and seasoning, not the grains, so it isn’t something you should go without enjoying. Works great with Moroccan style chicken or lamb.

Paleo Tabbouleh Ingredients:

  • 1 cauliflower, leaves removed
  • 2 large handfuls fresh parsley
  • 1 large handful fresh mint
  • 1 red onion
  • 15 – 20 ripe cherry tomatoes
  • Sea salt and black pepper
  • Olive oil and red wine vinegar, to taste

Paleo Tabbouleh How To:

1) Add the cauliflower florets to the food processor, just as if you were making cauliflower rice. Lightly process until it forms light and fluffy ‘grains.’

2) Finely chop the herbs, red onion and cherry tomatoes, and add to a large bowl. Pour in the cauliflower and mix really well. Season generously with salt and pepper, and drizzle with olive oil and red wine vinegar to serve. Easy as that!

Recipe: Cauliflower and Sweet Potato Curry

Cheap to make and wonderfully comforting, this vegetarian curry is great on its own or as a side to some chicken drumsticks. Great for curling up in front of the fire with on a cold winter’s day.

Cauliflower and Sweet Potato Curry Ingredients:

  • 2 cauliflowers, broken into florets
  • 2 large sweet potatoes, peeled and chopped into cubes
  • 1 red onion, sliced
  • 1tbsp cumin
  • 1 tbsp coriander
  • 1 tsp tumeric
  • 1 tsp chilli powder
  • 1 x 5cm piece of ginger, peeled and chopped
  • 2 cloves of garlic, peeled and chopped
  • 1 x 400ml can chopped tomatoes
  • 50ml coconut cream
  • Olive oil

Cauliflower and Sweet Potato Curry How To:

Heat a large pan with some olive oil to a medium heat, then add the onions and cook until golden. Throw in the garlic, ginger and spices, and cook for 2 – 3 minutes more.

Add a little more oil, then throw in the cauliflower florets and sweet potatoes. Allow to colour and pick up the flavours for 3 – 4 minutes.

Pour in the chopped tomatoes, stir, and cover with a lid. Leave to simmer for 20 minutes, stirring every now and then.

Thicken with coconut cream just before serving.

Recipe: Cauliflower Rice

Rice is a great side for many meals – but why have the grain rice, when you can have a far more nutritious Paleo alternative? This recipe is quick and easy and can be varied by using different herbs and spices. You can also stir in an egg whilst cooking, to make an egg fried rice; or make it a dish in it's own right by adding more vegetables such as capsicum (bell peppers) and zucchini.

This rice is so good, I've served it up many times without people even realising it isn't “normal” rice!

Ingredients:

  • Half a cauliflower
  • Half an onion
  • Coconut oil
  • Pinch cumin
  • Pinch paprika
  • Pinch cayenne pepper
  • Sea salt to taste

Method:

Grate the cauliflower florets by hand, or in a food processor, until the consistency resembles rice.

Dice the onion into small pieces and fry in olive oil over a medium heat

Once the onion starts to turn golden add the grated cauliflower and spices and stir for a few moments ensuring it doesn't burn. Add more oil if necessary.

Serve and enjoy! You can also make extra to store in the fridge, ready to be reheated with dinner.
